I would like to switch from cornbread to one of my favorite low-carb breads. These are staples in my baking collection. This gluten-free, grain free bun is one of my favorite low-carb hamburger buns. There are many low-carb sandwich bread recipes out there, but this is the one that I use when I cook burgers. They have a neutral flavor that does not overpower the delicious flavor of your grilled hamburgers. Despite the fact that they are very sturdy, not one crumb or piece fell from my burger when I was eating it. This sturdiness is not at the cost of being "moist". They aren't dry or hard to swallow. It was like eating a real and very soft hamburger bun.
These are made with my Gluten Free Grain-Free Focaccia Bread recipe.
SPECIAL NOTE - Make larger buns as shown above by making a double batch of batter. This doubles the carbs to 3.06 for a larger bun.
These buns will not be suitable for Atkins Induction. However, they are okay once you reach Phase 2 OWL nuts or seeds. These buns are suitable for Primal people and Ketogenic diets, provided that dairy is not consumed frequently. These buns do not fit into a Paleo diet.

INGREDIENTS:
1/2 cup almond flour
1/4 c. golden flax meal
1/4 c. plain, unflavored whey protein
1 tsp. Baking powder
3 T. cream cheese, softened
2 large eggs
1 1/2 c. Monterey Jack cheese shredded
1 tsp. cider vinegar
1 T. heavy cream
1 T. water
1 tsp. Dry yeast should be dissolved in 1 T. of warm water and 1 tsp. sugar (consumed by yeast)
Optional: Sesame or Poppy seeds
DIRECTIONS Heat oven to 350o Soften cream cheese in medium mixing bowl in microwave. Mix in the cream cheese, eggs, water, vinegar, and both cheeses. If necessary, dissolved yeast can be added. Mix all dry ingredients together with the water. Use a rubber spatula to stir. Use oil to grease your metal molds.
I baked my buns in 13-oz cans (tops and bottoms removed), that are used to cook the chicken breast meat. These cans have the perfect diameter. I have 8 of them saved over the years so that I could use them for this purpose. The cans don't look lined so it's okay to bake in them. These mini pans were perfect for my future hamburger buns. You could also use a large, round-shaped metal cookie cutter. Although muffin-top pans are fine, they will not make small buns. These can be shaped on parchment or silicone cookie sheets. They will expand as they cook so you might not like the final result.
Use a 1/4_cup measuring cup to scoop out 1/4c. batter. The batter should be evenly spread with a spoon. The batter should be approximately 1/2 inch thick and enough to make 7 buns. If desired, sprinkle on sesame seeds or poppy seeds. Bake buns in a 350o oven for 20 minutes, or until they are lightly browned around edges and the center is firm. Cool a few minutes. To loosen the buns, run a knife around their edges and then carefully transfer them to a cooling rack. Once they have cooled completely, cut them in half lengthwise and you are ready for your grilled hamburgers or other sandwiches. Any leftovers can be stored in a plastic bag in the refrigerator. These buns have some amazing nutritional stats.
NUTRITIONAL INFORMATION: You will need to make seven smaller hamburger buns. To create the "top" and bottom of your bun, you can slice them laterally. The 2-part hamburger buns contain: If you are used to making larger hamburgers, double the recipe and make seven.
